Pie and Pals


Isn't she a beauty! We got to have the Wood kids over to play and then afterwards we had a little birthday celebration for this lovely momma. I made my first Banana Pudding Pie (see recipe below) and Tobin ate my piece! (He didn't really it's an inside joke). Since Jody is a real life Bee Keeper, this poem is dedicated to her.

The Song of the Bee

Banana Pudding Pie 
  • Vanilla Wafer Crust (recipe below)
  • Vanilla Pudding (recipe below)
  • Whipped Cream (recipe below)
  • 3-4 medium bananas, cut into slices
  • 20 vanilla wafers plus more for decoration (see note)
Vanilla Wafer Crust:
  • 2 1/2 cups (about 30) crushed vanilla wafers
  • 1/2 cup butter  I used coconut oil and it was fantastic.
Vanilla Pudding (doubled)
  • 1  1/2 cup sugar
  • 2/3 cup all-purpose flour
  • 4 large eggs
  • 8 egg yolks
  • 4 cups milk
  • 4 teaspoons vanilla extract
Whipped Cream:
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 tsp. vanilla
For the crust:
In a medium bowl, stir together crushed vanilla wafers and butter  or coconut oil until blended. Firmly press on bottom and up the sides of a 9-inch pie plate.

Bake at 350° for 10 to 12 minutes or until lightly browned. Remove to a wire rack, and let cool 30 minutes or until completely cool.

For the pudding: Whisk together sugar, flour, eggs, yolks and milk in a heavy saucepan. Cook over medium-low heat, whisking constantly, 10-12 minutes or until it reaches the thickness of chilled pudding. (Mixture will just begin to bubble and will be thick enough to hold soft peaks when whisk is lifted. It must be thick and slightly bubbly to set up properly!) Remove from heat, and stir in vanilla.
Transfer to a medium bowl and cover with plastic wrap, making sure to press the plastic directly on top of the custard so it doesn't get a "skin" on it. Refrigerate til completely cool. (Can be made up to a day in advance.)
Whipped Cream: In a medium bowl, whip cream on medium high speed til soft peaks form. Slowly add the sugar and vanilla and continue to beat til thick and stiff. Don't overbeat or you'll have butter!
Assembly: Arrange half of the banana slices evenly over bottom of cooled crust. Spread 1/3 of cooled pudding over bananas, then layer with 20 vanilla wafers. Spread 1/3 more pudding over vanilla wafers, then add the remainder of the banana slices and cover them with the last of the pudding. Spread the whipped cream over the entire pie and decorate with more vanilla wafers if desired.
The layers from the bottom up should be: vanilla wafer crust, bananas, pudding, vanilla wafers, pudding, bananas, pudding, whipped cream
Refrigerate at least for 4 hours. Overnight is best. Consume within 2 days.
Also I used an entire box of vanilla wafers for the pie. If you want to decorate with additional wafers then get a second box to be on the safe side.

Shmanniversary

Love this wrapping idea. I tried to copy it for Timmy's Anniversary gift. It was our 9 year on August 14th and I may just have the perfect poem for the occasion:

So I have to explain this gift. I was so excited about it because I found it at the Bargain Barn for 25 cents! Its a 1938 first edition copy of Benjamin Franklin's biography. I looked it up online when I got home and it was selling for $385. Nice.

So the wrapping made for a neato bracelet for me afterwards. I wore it all week.

Sabzi on Whyte in Edmonton is the best persian food in town! Its my new favorite. EVERYTHING was perfect. Tim wanted to go there again the next night!

I got to visit Eli's work. I hadn't been there yet and I was floored by what he does, and all his innovative ideas. He's brilliant. He was like all business too- with a desk covered in computers and the phone ringing off the hook. It was so cool to see him work live.

SO handsome.

We stole him away for some bubble tea but it was a little bit tragical because Jenny wasn't there and I wanted to experience bubble tea with her for my first time. But she was so right, I am hooked. The avocado and tapioca is the best one.

 Lindsay is 30! Wahooo. She is my bestest bestest. I get so happy when I see her. She's like the balm of Gilead my mom would say. She loves olives so we went to the Italian Shop (I love the city sometimes) and she sampled all the different olive varieties (see the boy behind the counter, he would have done anything she asked him). Then we had a tasty lunch and one too many italian homemade treats. I've been craving those custard tart things ever since.

Eggs and Teeth

So it turns out I can get pretty fancy in the kitchen... well at least pretty fancy for Rice Krispie treats. I made these bird nests for the kids the day their friends Zach and Parley came to visit. We were thrilled to have C & Al coming to our house.That morning, I overheard the kids debating who's cheeks are squishier, Parley's or Scarlet's.

This is Parley chill'in in the chest. He's the BEST baby ever and the kids are right, his cheeks are definitely squishy.
Al finished dental school the weekend they visited so I made him this shirt in celebration. I did it the freezer paper stenciling way.  Probably the weirdest graduation gift ever.

The kids have been having Spanish lessons on Saturday mornings. I cannot believe how fast they learn and how impeccable they pronounce the words. Even little Jacob can say the spanish alphabet at lightning speed. At the end of our Mexico unit we had a Fiesta with some friends. It was so fun to have friends come party with us.
 We had stick on mustaches for everyone.




Charlie came up with the mustache cut in half and put in the armpits idea...
 then the eye brows...

We made corn tortillas and had tacos, cactus juice, polvorones (mexican cookies) 
and Mexican hot chocolate.

The kids performed the Macarena and played pass the sombrero, colored a Mexican flag, and even haggled with each other using their Monopoly pesos.

Bundles of Joy and lots of PAIN

As you can see by the picture I was completely enamored by new, little Julia. She was an ANGEL the entire time we visited, she smelled yummy and she let me cuddle her while she slept the afternoon away. Never have I seen a more winsome baby. 
The kids of course made her some fairies.

Now to applaud this new mommy. Amy was a lovely, happy mommy. GORGEOUS as always, healthy and well adjusted. Pat was pretty impressive too, even though he demanded I bring him cookies when I come :0) I have to tell one story about our visit because nothing like this has ever happened to me. Amy was telling me all the labor and delivery details, which I always look forward to hearing from new moms but this time, I don't know what happened to me. I don't know if its because I love Amy so I was really trying to empathize and imagine what it was like or what but Amy put me into labor! I am not kidding. She literally had to stop telling me about the delivery because I was about to pass out. When she started talking about it I was fine but then all of a sudden I got so warm and queasy and light headed. My kids can never tell me I don't have an imagination after that. I think I've been traumatized by pregnancy one too many times that I can't even listen to stories about it lately because the same thing happened last night with Tim. We were talking about when we want to have another baby etc. and I got a queasy tummy again. Apparently the memories of pain have not faded yet like they are supposed to. Anyways, Amy and I must be best buddies since I felt her labor pains cathartically!!!

SOOOOOO excited for Amy and her sweet family.

Hungry, Tired, and Neglected

We finally had our Red Brick Reunion. I was really looking forward to it and then I couldn't believe it was really happening. Texas, 2 Utah's, Seattle and Canada somehow finding each other at Shuswap Lake, B.C. Mishy sort of forgot her passport... Julie got a speeding ticket, Mary and I got stuck in traffic for hours but in the end, it was well worth the journey. It's so cool how so much has changed, yet so much is the same. I hope we make it a regular tradition.


So yes, let it be known, I may have crossed over into nerd land when I sewed these matching tank tops but come on, look how cute we are in our pictures all matching. Notice the red brick print :0)
This is us so excited that we still get along flawlessly and that things feel pretty much the same as they always did.

I did some intense manicures as usual.
We totally matched by accident. It was crazy. Now we know we must have met before this life...
Her Buddha was gone but we still like her.
K, this Mary girl really inspired me this weekend. She is so selfless and full of love for wherever people are at in their life and she laughs contagiously and I love love love her. This is us waiting for Mishy to have her passport delivered via the next Delta flight.
We did alot of jumping?? Why is that?? Maybe it made us feel younger.
Mish and I debated this cliff for way too long. It was sort of my fault but I am glad I had her with me.

We played Hedbanz, charades, and Texas Hold'em, we set off fireworks, we laughed together, cliff jumped, ate good food, laughed together, did some boating, watched a killer thunder storm, laughed together, did pedicures and massages,  discussed Julie's love life, went to the sea store, did lots and lots of laying around on the dock, laughed together, slept outside under the stars and talked all night, laughed together, talked about the state of our uteri... did some morning exercise and yoga, did our fortunes,  looked at old pictures from freshmen year, my heart is so attached to these girlies.
Most of the laughing was because of these two turtle doves. Greg and Nicole. The coolest couple ever! They were such a treat to have there. It wouldn't have been the same without them.

Robyn is my newest married friend.

I loved this moment- Robyn was so beautiful. When I saw her sparkly, teary eyes I lost it. I pretty much cried all day. I don't know what came over me! The slide show was the worst though- I was getting to wonder if maybe I was pregnant or something because my eyes would not stop crying. I finally decided it must be that I am just really really happy for these two turtle doves. They are both such good people with wonderful families and they seem so happy together and my heart was filled for them.

Jenna is everyone's bridesmaid. We counted that this is like her eighth time or something! But no wonder, just look at her. She was nine months pregnant and dazzling.

My girls! I wish saw these guys more often.

Where is Kirsten? Somehow she missed the picture, she was probably busy making all of our husbands laugh. Timmy always enjoys seeing her. Anyways, Linds and I are sandwiched between the pregnant girls- Jenna and Amy. It was so fun seeing my best buddies. LOVE these guys.
